Ingredients
2cupsblanched almond flour
2tbspcoconut flour
1/4cupflaxseed meal
1/2tspbaking powder
1/2tspbaking soda
1tspsea salt
1tspraw honey
1tbspcoconut oil
1tsplemon juice
5eggs

1tbsppumpkin seeds

Instructions
Preheat oven to 350 degrees Fahrenheit. Grease a medium-sized loaf pan well and set aside.
In a medium bowl, combine dry ingredients: almond flour, coconut flour, flax meal, baking powder, baking soda and sea salt.
In a large bowl, whisk wet ingredients — honey, coconut oil, lemon juice and eggs — until light and fluffy.
Mix the dry ingredients into the wet ingredients, and stir well. Pour into the loaf pan and sprinkle with oats and pumpkin seeds. Bake for 30 to 35 minutes, until lightly browned and a toothpick inserted comes out clean. Cool before slicing.

The key to making great French toast with denser gluten-free bread is to dry out the slices before adding the egg batter. Allow the slices to dry out in a warm oven prior to assembling.
Ingredients
1almond flour bread loaf, sliced fairly thick
1cuporganic blueberries
4eggs
1cupunsweetened almond milk
1/4cupmelted coconut oil
1tsppure vanilla extract
1/4tbsppure maple syrup
1tspcinnamon

Instructions
Arrange the bread slices on the diagonal in two or three rows in a casserole dish, slightly overlapping each slice. Sprinkle with blueberries.
Whisk together eggs, almond milk, melted coconut oil, vanilla, maple syrup and cinnamon. Pour over the bread slices and blueberries — making sure to coat all of the bread evenly.
Cover casserole dish with aluminum foil and refrigerate overnight.
In the morning, preheat the oven to 350 degrees Fahrenheit. Remove the tin foil and bake for approximately 45 minutes or until golden. Serve with warm maple syrup.

Preheat oven to 400 degrees Fahrenheit. Place a baking rack on a baking pan. Lay bacon slices in one single layer on the baking rack. Bake the slices for 15 minutes, or until the bacon begins to brown. Remove the baking tray from the oven — being careful not to splash any hot bacon grease.
Brush the bacon strips with the maple syrup and return to the oven. Bake for an additional 5 minutes or until the bacon is golden brown. Transfer to a plate and serve warm.
Recipe Notes
Note: You may also cook the bacon in a frying pan on the stove. Cook bacon, turning over to brown. Remove bacon from the pan and layer on a paper towel-lined plate. Carefully discard the grease from the frying pan. Add maple syrup to the pan, and then add the bacon back, turning to coat. Cook for approximately 5 minutes or just long enough to finish browning the bacon. Serve warm.
