If you thawed your ground beef in the refrigerator, you’re in the clear. The USDA says it’s safe to refreeze raw ground beef that’s been kept cold (below 40°F) during the thawing process. Just make sure to refreeze it within two days, and always wrap it tightly in plastic wrap, foil, or a freezer-safe bag to prevent freezer burn. Don’t forget to label and date the package.

However, if your ground beef was thawed using cold water or the microwave, it must be fully cooked before refreezing. That’s because these methods can cause the meat to enter the “Danger Zone” (between 40°F and 140°F), where bacteria like E. coli multiply quickly. Once thawed this way, ground beef should be cooked to an internal temperature of 160°F, then cooled and stored in an airtight container or freezer-safe bag.
