Salted-Caramel Sauce

Ingredients
  • 214-ounce cans full-fat unsweetened coconut milk
  • 1cup coconut sugar
  • 1/2cup pure maple syrup
  • 2tsp pure vanilla extract
  • 1/2tsp sea salt

Instructions
  1. Whisk together coconut milk, coconut sugar, maple syrup, and sea salt in a heavy large skillet over a medium heat until sugar dissolves.
  2. Increase heat to medium-high and boil until mixture reduces to 2½ cups, stirring occasionally, approximately 20 minutes. Transfer sauce to small jars and apply lids. Cool completely, and then chill in the refrigerator.

Hot Fudge Sauce with Honey

  • 2/3cup raw honey
  • 1tsp pure vanilla extract

Honey-Sweet Triple Berry Jam

  • 2cups organic blueberries
  • 1cup organic strawberries (hulled and sliced)
  • 1cup organic raspberries
  • 2/3cup honey
  • 1/2 lemon, juiced

Instructions
  1. Process jars and lids: Preheat your oven to 225 degrees Fahrenheit. Place clean jars on a baking sheet and slide into the oven for approximately 20 minutes. Turn heat off, but leave jars in the oven until ready to use. Wash lids and rings and drop into boiling water for 10 minutes.
  2. Pour berries in a medium saucepan and mash. Add honey and lemon juice and stir to combine. Place the pan on the stove and bring to a boil. Reduce heat to medium-high and cook, stirring often, for approximately 10 to 12 minutes, or until jam thickens.
  3. Pour hot jam into clean, hot jars, and apply lids and rings tightly. Process the bottled jam in a boiling water bath for 10 minutes. Make sure the pot is tall enough for water to cover the jars completely. After 10 minutes, remove jars from the water and set on a cooling rack or folded kitchen towel to cool. The lids will make a popping noise and become slightly concave as they cool.

Note: If you prefer not to process the jam, simply pour it into clean jars, cover with lids and rings and place in the refrigerator.

Honey-Wine Jelly

Ingredients
  • 2cups dry red wine, such as Cabernet Sauvignon
  • 1 3/4ounce package regular powdered fruit pectin
  • 3 1/2cups honey
  • 1/4tsp extra virgin coconut oil
Servings: cups, or 6 half-pint jars
Instructions
  1. Combine wine and pectin in a large pot. Stir over a high heat until the mixture comes to a full, rolling boil. Add honey and return to boiling.
  2. Add coconut oil and boil for two minutes more, stirring constantly. Remove from heat and quickly skim off any foam with a metal spoon.
  3. Ladle into clean jars. Cover the jars with lids and cool completely. Store the wine jelly in the refrigerator for up to three weeks.
Recipe Notes

For longer storage, process jars. Pour the hot jelly into clean, hot jars, leaving a quarter of an inch space at the top. Apply the lids and rings tightly.
