The key to making great French toast with denser gluten-free bread is to dry out the slices before adding the egg batter. Allow the slices to dry out in a warm oven prior to assembling.
Ingredients
  • 1 almond flour bread loaf, sliced fairly thick
  • 1cup organic blueberries
  • 4 eggs
  • 1cup unsweetened almond milk
  • 1/4cup melted coconut oil
  • 1tsp pure vanilla extract
  • 1/4tbsp pure maple syrup
  • 1tsp cinnamon
Servings: cups
Instructions
  1. Arrange the bread slices on the diagonal in two or three rows in a casserole dish, slightly overlapping each slice. Sprinkle with blueberries.
  2. Whisk together eggs, almond milk, melted coconut oil, vanilla, maple syrup and cinnamon. Pour over the bread slices and blueberries — making sure to coat all of the bread evenly.
  3. Cover casserole dish with aluminum foil and refrigerate overnight.
  4. In the morning, preheat the oven to 350 degrees Fahrenheit. Remove the tin foil and bake for approximately 45 minutes or until golden. Serve with warm maple syrup.

Recipe by:The Alternative Daily
Ingredients
  • 16slices thick-cut smoked bacon (if possible, a high-quality, organic variety from a trusted local source)
  • 2tbsp pure maple syrup
Servings: servings
Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Place a baking rack on a baking pan. Lay bacon slices in one single layer on the baking rack. Bake the slices for 15 minutes, or until the bacon begins to brown. Remove the baking tray from the oven — being careful not to splash any hot bacon grease.
  2. Brush the bacon strips with the maple syrup and return to the oven. Bake for an additional 5 minutes or until the bacon is golden brown. Transfer to a plate and serve warm.
Recipe Notes

Note: You may also cook the bacon in a frying pan on the stove. Cook bacon, turning over to brown. Remove bacon from the pan and layer on a paper towel-lined plate. Carefully discard the grease from the frying pan. Add maple syrup to the pan, and then add the bacon back, turning to coat. Cook for approximately 5 minutes or just long enough to finish browning the bacon. Serve warm.
