- 1tbsp peanut oil
- 1lb chicken breasts, boneless and skinless
- 2 eggs, lightly beaten
- 1cup almond flour
- 1tbsp smoked paprika
- 1/2tsp garlic powder
- 1/2tsp onion powder
- 1/2tsp cayenne pepper
- 1tsp sea salt

- Preheat the oven to 375℉. Prepare a baking sheet with peanut oil.
- Slice chicken breasts into long strips, 1 to 2 inches wide.
- Arrange two shallow bowls side-by-side. Crack the eggs into the first bowl and whisk. In the second bowl, combine the almond flour, paprika, garlic powder, onion powder, cayenne and salt.
- Dip each piece of chicken in the egg and then coat with the almond/spice mixture. Place the chicken fingers on the prepared baking sheet.
- Bake for 20–25 minutes, until golden in color and cooked through. Serve with dipping sauce.
